What You Need to Know Before You Apply

What is the purpose of this trial?

This study will assess the effects of daily intake of yellow and white potatoes on plasma lutein and zeaxanthin concentrations. Skin carotenoid levels will be assessed using the Veggie Meter.

Are You a Good Fit for This Trial?

This trial is for adults who are able and willing to eat potatoes daily. People with health issues or dietary restrictions that prevent them from eating potatoes, or those taking supplements affecting carotenoid levels, may not be eligible.

Inclusion Criteria

Able to provide written consent in English
Willing to adhere to study procedures
Baseline Veggie Meter score of ≤ 300

Current pregnancy
Vegetarian diet
Elite athletes or long-distance runners

Timeline for a Trial Participant

Screening

Participants are screened for eligibility to participate in the trial

1-2 weeks

Treatment

Participants consume 250 g of either yellow-flesh or white-flesh potatoes daily

4 weeks
Daily intake

Follow-up

Participants are monitored for changes in plasma lutein and zeaxanthin concentrations and skin carotenoid content

Trial Overview

The study compares the effects of eating yellow-flesh versus white-flesh potatoes every day on blood and skin levels of certain nutrients called carotenoids (lutein and zeaxanthin).
